Churros con chocolate (recipe)

A 30 minute drive to eat Churros at a cafe? No thanks! So my friends and I decided to make these ourselves. Quick and easy to make, and super yummy! This recipe produces a lovely crispy churro which means its perfect to dunk into the chocolate sauce!

Recipe: serves 4 people

Ingredients:
Churros
2 cups water
5 tablespoons white sugar
1 teaspoon salt
4 tablespoons vegetable oil
2 cups plain flour
2 eggs
vegetable oil for frying
1 cup of white sugar
2 teaspoons ground cinnamon
Chocolate dipping sauce

150g dark (70%) chocolate, chopped
100g milk chocolate, chopped
2 tablespoons of honey
300ml double cream

Equipment:
Piping bag and star tip

Method:
Churros
1. Combine water, sugar, salt and oil in a medium saucepan over a medium heat. Bring to the boil and remove from the heat.
2. Stir in the flour and mix well with a wooden spoon until the mixture forms a ball.
3. Put back onto a low heat and mix well for 1 minute
4. Remove from the heat and beat in one egg at a time. It takes some work to incorporate the eggs. At the beginning it will look really slimy and look like it's not going to come together, but keep beating really hard and eventually the whole egg will become incorporated - then add in the second one.
5. Spoon the mixture into the piping big with a star tip nozzle attached
6. Heat vegetable oil in a deep-fryer or wok until 190 degrees celsius or until bubbles fizz around a wooden chopstick/spoon end. Pipe strips of dough into the oil, using a knife to cut off the desired churro length. Fry until golden and drain on paper towels
7. Combine the sugar and cinnamon in a big bowl and roll the churros in the mixture

Chocolate dipping sauce
1. Place all the ingredients into a saucepan and heat slowly over a low heat, stirring continuously.
